It is Spring!
Serve in Tall Glasses ...

Punjab's inimitable summer beverage -- lassi -- is a refreshing alternative to milkshake. Sweet or savoury, the method is simple: blitz yoghurt with your chosen flavouring, water and ice.

This version is a favourite with my own kids. Serves four.

 

600 ml plain yoghurt
80 g caster sugar (very fine, granulated)
1 tbsp rose water (or to taste)
Pinch of ground cardamom (optional)
200 ml cold water
100 g crushed ice cubes

Put the yoghurt, sugar, rose water, cardamom and water in the blender.

Process for a minute, add the ice and process for a minute more.

Serve in tall glasses.

Lassi, whether salty or sweet, is awesome ... but particularly in the heat and dust of Punjab. There are specialty Lassi shops in Amritsar serving the best lassis in the world!
